What is zero emissions roasting??
Innovation in engineering and just better coffee roasting sense met to create a company called “Bellwether Coffee” some years ago. The equipment has evolved to allow for perfect control of the roasting cycles to deliver the repeatably great roasts yet, much more interestingly; the roaster is powerful, large batch capable and electric. This means no VOCs in the air from combustion or just natural gas being sucked into the roasting chamber and no related flavor contamination. Just damn good, clean coffee. You will notice the distinctly clearer notes.
Why the great price for premium micro-roasts?
We have incredible sourcing and only source through the most ethical farming paying 50% more than Fair Trade coffee prices while ensuring sustainable and fresh production. Our source partner is simply the best at this. We want every single coffee experience to reflect our respect and appreciation for the harmony of sustainable living through conscientious farming and souring.
What about mycotoxins? I have read they are in almost all coffee beans at my local store and coffee bar.
You are right and we are helping to change that! Coffee is an extremely rich source of nutrition for molds. Given the moisture levels and lack of care in handling as well as mass-order batches sitting in cargo ships simply growing molds, most mega-scale suppliers and high-profit roasters may be aware yet are driven by the bottom-line to deliver maximum profit at the trade-off in quality and actually making you sick. Coffee should NEVER make you jittery or shaky.
That is not the caffeine, that is your immune system in mild shock responding to a wave of toxins from molds. Our beans are batch tested yet, more importantly, we source with rapid turn-around and small batch process to ensure the best possible health of our beans and product.
Can I Custom Order?

Is your packaging really compostable?
Absolutely. We source bags made from curbside rated, bio-sourced PLA (Polylactic acid) and Kraft paper layers in the bag itself. The zip seal and off-gassing valve are also curbside compostable PLA material. Luckily, unlike a banana, it will not start to decompose just sitting-out on the counter and remains intact to preserve freshness and flavor notes. The compostable rating is related to being in a compost environment mixed with other compostables and appropriate moisture to convert it into foodstuffs for microorganisms.
Do I need to remove the label for compost?
Nope :) What a PIA that is. Our are labels are printed by Plan it Green and are specifically sustainably sourced, certified composable materials using safe inks
